Chickpea salad

Just ate this tasty salad at Firehook. I'm thinking I might make it at home.

Ingredients:
Chick peas
Chopped red, green, and orange peppers
Diced Red onion
Parsley
Lemon juice
Olive oil
Dijon mustard
