Ingredients:
- 1 cup Bob's Redmill Cornbread Mix
- 1 egg
- 1 1/2 T sugar
- 1/2 cup milk
- 1/3 cup fresh squeezed lemon juice
- 1/4 cup water
- 1/4 cup vegetable or canola oil
- butter for skillet
Directions:
Mix together all the ingredients in a bowl. Add a little more water if needed to get a pancake consistency. Pancake temperature, pancake time. Serve with homemade lemon curd and blueberries.
